How can I make use of herbs that are older but still good?

If you have some herbs and flowers dried from last year's garden season, and know they are running out of "potency" or flavor, try blending them into potpourris, add a few drops of essential or fragrance oil, store it in an airtight container for a few weeks, and share it with your friends.
